Wireshark can "catch" all packets it sees, but Wireshark can only dissect packets for which someone has written a protocol dissector for. Adrian Daerr wrote the GVCP dissector, which was committed on March 15, 2010 and has been maintained ever since. Conversely, nobody has yet written a GVSP dissector, thus there is no Wireshark dissection support for that protocol yet.
